Slice open avocados and remove pits, then scoop avocado flesh into a large bowl and mash with a fork.
Add lime juice and stir to coat.
Use a box grater to grate onion (about 3 Tbsp worth) and add to the bowl.
Grate the garlic cloves using a handled zest grater or the box grater you used for the onion. Either way, watch your fingers!
Add salt and pepper, stir to combine and taste; season more if needed.
If you have a fresh garden tomato, dice it up, add to the bowl and mix.
Serve with soy-free corn chips.
